Riley Grae Moore's Restaurant Experience is :
Working in a 2star Michelin Restaurant I've 'opened' 5 restaurants from before opening thru opening day. And helped out 2 others shortly after their opening, these are the restaurant disaster times: the "openings" I was an assistant general manager at a fine dining turned night club at night and was the beverage director there.. I worked as a 'wine steward' aka sommelier And I worked in a vineyard in Australia making wine from picking grapes to bottling.. Below is the cookbook by Riley Grae Moore It avoids influence of the restaurants he has worked in, but rather has family inspiration from growing up and some of his own creations. |

wash them off a couple times, then use Kitchen Scissors to cut stacks of leaves the same types of herbs..

Scrambled Egg Whites with Whole Yolk

Eventually, I’ll get the entertainment channel up and running. And I do love certain cooking competitions. I think the best way to open a restaurant in that respect is have one of those, with some top chefs who are looking to finally chef their own restaurant…. But we will see..
“Riley’s Scrambled eggs” any restaurant if they do it right $50- plus tax and grat.. * we might cut that cost with the right chef in the place..
In the mean time I may do a tutorial of my favorite way to scramble an egg, (self taught cook idea)
Pan with little butter,
3 cracked eggs (or so)
Scramble only the egg whites leaving the yolk alone (but moving yolk a bit without breaking them)
once egg whites have no clear “white”, all is ready
little sea salt.. pepper..
on top of a potato hash is the best..
The goal is always have the yolk still whole on your dish.. Turning the yolk a bit will help with that trick, but if you got pointy hask you need soft egg white first..
Use a soft/firm spatchula, with a light scooped shape is best, for the yolk..
Yolk can break:

I believe this is a traditional Crêpes recipe (Crêpes were a speciality my Dad would make on Holidays, Sundays & Special Occasions)
What makes my Crêpes mine is the Menu I create for them Christmas Menus 2019, 2021 are all Below.. *The Chocolate Hazelnut is pretty traditional..
*If I were to open a restaurant: I would have these dessert menus with these Crêpes as choices. And I would add 2 more, One staple savory and one in rotation of local farmers seasonal produce, Same dish, choice of which (one of each or two of the same).. Depends if they are French size or American size, which is backwards in this case..
Where Crêpes were first created they use buckwheat common to the area: I use white flower.. I gotta try buckwheat next year..

This is the traditional Orange Syrup to go with the Crêpes, to make it Crêpe Suzette
1 cup Powder Sugar
1/2 cup Butter
2 cups Fresh Orange Juice
1/4 Cup Grand Marnier (not necessary, fresh oj is nice without the alcohol even if it is cooked off to a syrup)
+Fresh Grated Orange Zest (Microzest if you can)
Bring to a boil, cut the heat but keep it at reducing hot temp and burn off: aka reduce to half the volume..
Stirring but not overstirring.

LUNCH / DINNER

EVERY single restaurant that has sold Grilled Cheese that I have worked in, sells them anytime.. And here I have a great thing for it too, but its not the most healthy thing on any menu, just beautiful comfort food..
Okay, I'll spoil my cook book.. :
"Best short time" for a grill cheese (self taught)
Cheese: You Pick, I like cheddar (Doesn't need too much, that ruins it, not too little, that ruins it too)
Bread: You Pick, I like a lot: Sourdough, and a lot of others..
PAN: Low Temp and up a bit
Use a toaster to warm up your bread to a light golden brown texture like sun.
Throw in a little butter to the pan AND butter BOTH sides of the bread you need.
THROW IT DOWN NOW:
bread (buttered side down) - cheese - lite salt & pepper - bread (buttered side up)
Put a lid on it! .. This is very fast on each side .. AND This way the Cheese doesn't overcook in the process.
WHEN GOLDEN ON EACH SIDE: Cook a few shredded bits of mild cheddar on each side til they look beautiful, short time..
For my veggie add I like: I use Tomatoes and Basil Added LAST. Opening the Grill Cheese like a book it best for this..
Then cover the taste in a side of ketchup or ranch or somethin', sheeeeoot..
OUR RESTAURANTS WILL HAVE OUR COOKBOOK HANDBOOK, FOR WHEN YOUR NOT TOO LAZY AT HOME, TO HAVE YOUR LAZY ASS SERVED.. I mean you could have takeout too, so I apologize. Because we know the cookbook will only be your couch reading material, whereas our restaurant makes it right, so there it is..

TERIYAKI SAUCE: Update 6.15.2022
This is taken from the internet from several combinations of recipes: This is what my mom does, is works to create her own recipes..
(This was done first today and tasted great: I change some measurements and add extras to not miss out on flavors I like.. xtra garlic and ginger and using both honey with brown for a sugar syrup) This was a first, if I change the mix to something better I will update it, but this was good.
Washington state has great Mom n Pop Teriyaki strip mall stops one after another..
Working in a Tire Changing Store: That food was the best escape from the gig..
California has nothing like what Seattle has (I did find a Strip mall spot that offers good Teriyaki but its not the specialty, they do sushi, and not quite Seattle, but still fills the missing piece) Going to change the next recipe to the following (6.11.2022)
Boil 1 Cup Water:
Mix with:
3/4 C Brown Sugar
1/2 C Honey
Stir until all Brown Sugar Dissolves in the fresh boiled water with honey and brown sugar. This becomes the Syrup.
add (while the water was boiling prep the below)
4 Garlic Bulbs Pressed
Two Thumb size of fresh grated ginger, grated small
add
3/4 C Soy Sauce
1 Oz TableS Sesame Oil
1 Oz TableS Rice Vinegar
1.5 Oz Maple Syrup (New) very nice add..
Stir well.. AND let cool to room temp, or put in fridge to speed up the minutes.. Taste it, mmmmmm (thats the sauce hitting all flavors of the taste buds)
& separate into two sides:
1 for the overnight marinade 3/4 of the mix
&
1 side sauce to thicken in a heated pan with 1/2 TableS Cornstarch: Add when serving.. 1/4 of the mix
Best way to cook is on an outdoor grill, with tin foil down, (this will miss the grill char, but have a better cook) fold up the corners of the foil so you can add the marinade with what your cooking like a soup boil. Use a metal immediate temp thermometer and cook just the point*** and not over)
While cooking, turn your ..... Only one time, to cook once on each side... Chicken filets will take about 10 minutes each side for 20 minute total : Cooking to 160-165 tops..
(I'm waiting for the next batch to find what to give it a kick.. Dried peppers.. hmmm

This is an herb garlic bread, my mom would make growing up: I would eat the whole loaf of what others didn't..
Experimenting with bread is fun with this one, but bland bread is great too because of the herb spread.
On a Baguette or your choice of bread
(cut down middle or sliced individually to spread each piece, depends on your time and choice preference)
Set the oven to 350:
Prep:
Herb Mix: Try both fresh and dry on this: All chopped fine
1 TableS Parsley Flake (dry)
1 TableS Dill Seed (THE KEY ingredient)
1/4 TableS Oregano (fresh and dry)
1/4 TableS Rosemary (fresh and dry)
1/4 TableS Basil (fresh and dry)
A little bit of Sage too (fresh and dry)
Add:
1 teaS Garlic Salt
(Experiment with pressed garlic bulbs too, a lot goes a long way with Garlic, but I like it)
Mix with:

Spread the mix on the bread and wrap in foil..

Name the same as it reads:

Cut Red Pepper to 64' Silver Dollar/Square Sizes.. 1 inch by 1 inch bites..
Top with Goat Cheese
Spiced Salt (Nice sea salt works great too)
Fresh Cracked Pepper
Chopped Rosemary..
IF YOU BUY Goat cheese.. Spread a light spread on your Grill Cheese for the best.
IT is way better with a goat spread.. N' some of your other cheese too..

LARGE HANDFUL Mini Heirloom Tomatoes cut in half 3 times... Half the whole, half the halves, half the quarters..
Chop one basil stalk in to fine small strands
Press 3 bulbs garlic
1 TableS Olive oil
1 TableS Balsamic
Cracked Salt
Cracked Pepper
1/3 Large Mozzarella ball, chopped up..
Mix together in prep bowl: AND Drain tomato seed juice, so the mix has no 'juice'.
LAST: Toast the bread, serve hot toasted bread and last add the room temp/cold Bruschetta..
*Great date night food with the raw garlic..
Tomato cut trick, with some patience..
Place your heirloom cherry tomatoes in between two lids and cut thru the middle to halve the tomatoes in a nice fast way..

WARNING: YEAST levels on this are high, small em down because these explode on opening: Have the right pressure bottles and careful opening..
Still: this Fresh Ginger Ferment will make the best Moscow Mule: I Created this and Served it at a place I worked and worked hard to make this..
Boil 10 quarts water and add:
2 deli cups fresh ginger root pureed with water and simple
basically 2 pounds ginger chopped and blended
1/2 deli cup lime Juice, 1/2 deli cup lemon with the citrus zests!
6 ounces cream of tartar
Cover and let cool to room temp while stirring occasionally
At room temp add:
6oz Dry yeast dissolved in 1 cup warm water, add to pot
Cover and let sit for 6 hours
After six hours add:
6 pounds sugar to water for simple
1 1/2 cup dark rum (optional) and Bitters (flavor and to preserve aging)
Bottle immediately with a very small extra pinch of yeast and salt to each bottle give it a 'small flip mix & back upright',
Let sit in dark warm place for two days.
Try one after two days, move the rest to the fridge.
Makes roughly 11 quarts or 30, 12 ounce bottles.

Wash ginger root but do not peel. Chop roughly and process in food processor until reduced to a textured paste. Use water and simple syrup to puree. Put ginger in a large non reactive container and pour boiling water over it. Stir in the lime juice, zest and cream of tartar.
Cover and stir occasionally as mixture cools. When lukewarm, mix the yeast with the warm water, pressing out lumps, and add to container.
Cover and let stand for 6 hours. Stir the sugar into the ginger beer and immediately pour into sterilized bottles, making sure the stoppers are well sealed and airtight STANDING UPRIGHT after adding an extra pinch of yeast and salt. The ginger beer will keep for a week in the fridge.

Wash ginger root but do not peel. Chop roughly and process in food processor until reduced to a textured paste. Use water and simple syrup to puree. Put ginger in a large non reactive container and pour boiling water over it. Stir in the lime juice, zest and cream of tartar.
Cover and stir occasionally as mixture cools. When lukewarm, mix the yeast with the warm water, pressing out lumps, and add to container.
Cover and let stand for 6 hours. Stir the sugar into the ginger beer and immediately pour into sterilized bottles, making sure the stoppers are well sealed and airtight STANDING UPRIGHT after adding an extra pinch of yeast and salt. The ginger beer will keep for a week in the fridge.

Well, like a ton of products in the market, the label or package producer fucked up or the ordering did or the designer or someone fucked up but everyone fell in love with the mistake, saved some money probably somehow, and kept the story.. so it was an ordering labeling error that stayed with the company.. *In this case it seems a Judge suggested the mistake would be a good marketing tool..

Well, they like to be constant T.V. one of the kids is a comedian trying to cut a cucumber.. Make sure you take the seeds out of those, very important..
So, to correct the constant stupidity in T.V. :
Prepping the cucumber: Wash it, take a carrot blade, carrot cutter (some call it a 'outside of carrot trimmer' or Hand Carrot Planer and make equal stripes of green and cut cucumber from end to end.
Cutting the cucumber: Your arms should feel comfortable, the gal has her arms crossed in the video, so it likely doesn't feel comfortable to her either.. You look Righty, so Cucumber in left hand. with the end you will be cutting on the right side of the cucumber towards your right hand and the knife..
I would look for the internet roasting you, but I can imagine.. You were on the news for this stupidity.. But, in over a decade of LA's Restaurants, we see this kinda shit all the time.. all the time.. And I was a few of these here and there.. Your cutting skills are like having your back turned to what your cutting, super solid, good work there..
